Authentic South Indian Bamboo Rice Payasam (Kheer) Recipe

Bamboo rice payasam is a traditional South Indian dessert made with bamboo rice, jaggery, coconut milk and cardamom. Also known as moongil arisi payasam, this naturally sweet dish has a rich texture and earthy flavour. It makes a wonderful addition to festive meals, celebrations and traditional family gatherings.

Ingredients

  • 1 cup bamboo rice
  • 2 cups thin coconut milk
  • 1 cup thick coconut milk
  • 1 to 1½ cups grated jaggery
  • ½ teaspoon cardamom powder
  • 1 tablespoon ghee
  • 2 tablespoons grated coconut
  • 1 tablespoon cashews
  • 1 tablespoon raisins
  • A small pinch of salt

How to Make Bamboo Rice Payasam

Step 1: Prepare the Bamboo Rice

Wash the bamboo rice thoroughly and soak it in water for 2–4 hours. Drain and add the soaked rice to a heavy-bottomed pot.

Add the thin coconut milk and cook on medium-low heat until the rice becomes tender. Stir occasionally to prevent sticking.

Step 2: Prepare the Jaggery Syrup

While the rice cooks, place the grated jaggery in a saucepan with a small amount of water. Heat until the jaggery completely dissolves.

Strain the syrup through a fine sieve to remove any impurities. This creates a smooth base for the payasam.

Step 3: Combine the Jaggery and Rice

Once the bamboo rice is soft, gradually add the strained jaggery syrup. Stir gently and allow the mixture to simmer for a few minutes.

Avoid boiling it aggressively after adding coconut milk, as excessive heat can cause coconut milk to separate.

Step 4: Add Coconut Milk and Cardamom

Lower the heat and add the thick coconut milk. Mix gently and cook for another 2–3 minutes. Add cardamom powder and a small pinch of salt to balance the sweetness.

Turn off the heat once the payasam reaches a creamy consistency.

Step 5: Add the Garnish

Heat ghee in a small pan and lightly fry the cashews, raisins and grated coconut. Add them to the prepared payasam and mix gently.

Serve warm or allow it to cool before serving. The payasam naturally thickens as it rests.

Why Bamboo Rice Payasam Is a Traditional Dessert Choice

Bamboo rice provides a distinctive grain texture compared with ordinary white rice. It can also contribute fiber and other nutrients depending on the variety and processing. Jaggery provides sweetness, while coconut milk adds richness and a creamy consistency.

Calling a dessert “healthy” depends on the overall recipe and portion size. Jaggery is still an added sugar, and coconut milk can be calorie-dense, so moderate portions are appropriate.

Bamboo Rice vs White Rice in Payasam

Bamboo rice can offer a more substantial texture and a different nutritional profile than polished white rice. Its use may increase the variety of whole or less-refined grains in traditional desserts.

However, the nutritional advantage should not be overstated. The amount consumed, jaggery quantity and coconut milk used all influence the final nutritional value of the dish.

Tips for Perfect Bamboo Rice Kheer

Soaking the rice before cooking helps reduce cooking time and promotes even cooking. Use low to medium heat and stir occasionally for a creamy texture.

Add jaggery only after the rice has softened. Straining the jaggery syrup improves the texture, while adding thick coconut milk toward the end helps maintain its creamy consistency.

Conclusion

Bamboo rice payasam is a delicious interpretation of a classic South Indian festive dessert. The combination of tender bamboo rice, aromatic cardamom, natural jaggery sweetness and creamy coconut milk creates a comforting traditional treat. With proper soaking, gentle cooking and careful addition of jaggery and coconut milk, this moongil arisi payasam can become a memorable addition to festive meals and special occasions.
